This week we want to cook and share a very nice and tasty recipe ideal for any kind of celebration you might have, Baked Scallops. It is very easy to prepare and you will love the flavour, delicious. But before we share our recipe, let’s get to know some information about this really nice seafood, the scallops. Scallops, in addition to their delectable taste, contain a variety of nutrients that can promote your cardiovascular health, plus provide protection against colon cancer. They are actually an excellent source of a very important nutrient for cardiovascular health, vitamin B12. Vitamin B12 is needed by the body to convert homocysteine, a chemical that can directly damage blood vessel walls, into other benign chemicals. Since high levels of homocysteine are associated with an increased risk for atherosclerosis, diabetic heart disease, heart attack, and stroke, it's a good idea to be sure that your diet contains plenty of vitamin B12 to help keep homocysteine levels low (homocysteine is also associated with osteoporosis, and a recent study found that osteoporosis occurred more frequently among women whose vitamin B12 status was deficient or marginal compared with those who had normal B12 status.) In addition to their B12, scallops are a good source of magnesium and potassium, two other nutrients that provide significant benefits for the cardiovascular system. Ingredients

  • 12 scallops on the shells
  • 2 cloves of garlic
  • 1 spring onion
  • 1 parsley sprig
  • 100 grs. (3.6 oz) minced serrano ham
  • 50 grs. (1.76 oz) breadcrumbs
  • 90 ml. (3 oz) local dry sherry wine. We use Gran Mayeto, el Gato winery
  • 2 tablespoons mild olive oil
  • Salt and white ground pepper

Preparation


⦿ We are going to preheat the oven at 180º C (350 F).


⦿ Then we are going to rinse well the scallops.


⦿ Let’s mince all ingredients well and prepare the stirfry, frying them in a frying pan in the following order, the spring onion, the garlic, the Serrano ham, and the minced parsley.


⦿ We stir well and add the dry sherry wine. We will keep on stirring well until the alcohol evaporates and all ingredients mix well.


⦿ We put the scallops on an oven tray and add the stir-fry on top of everything. Season now.


⦿ We are going to add the breadcrumbs and put in in the oven for 15 minutes at 180º C (350 F)
