Fish Rota Style Pizza - Pizza de Pescado a la Roteña

We just celebrated in Rota the first Rota Pizza festival and it was a great success. From our Blog Aprendiendo a Cocinar, we wanted to celebrate this great event cooking a special Pizza with the most traditional local recipe, Fish cooked Rota style - Pescado a la Roteña. And we are very happy with the results! In times past, our Gastronomy, as well as our local economy, was based primarily on the sea (fish and seafood) and produce from the land (tomatoes, green peppers, pumpkin, …). Really nice and healthy ingredients. And this is the recipe that we really hope you love it as much as we do:


Ingredients

  • For the dough:
  • 3.5 grs fresh Baker's yeast
  • ½ teaspoon salt
  • 125 ml of water
  • 250 g of wheat flour
  • 3 tablespoons of olive oil
  • Several tablespoons homemade tomato sauce
  • For the Rota style sauce:
  • 2 big onions
  • 3 cloves of garlic
  • 1/2 kilo (1 lb.) fresh tomatoes (perfectly ripe)
  • 3 green peppers
  • 2 bay leaves
  • 1/2 kilo (1lb) Sea bassapproximately
  • 75 ml. (2.5 oz) extra virgin olive oil
  • 75 ml. (2.5 oz) dry Sherry wine
  • A small glass of cognac
  • Ground Black pepper
  • Oregano
  • Ground Nutmeg
  • Salt

Preparation



  • We are going to start preheating the oven at 180º C (350ºFahrenheit).

  • To prepare the dough of our pizza, we will mix the yeast with the salt and will add the warm water. Always kneading. Add the flour and the olive oil. We will let the mixture stay for a couple of hours.

  • Let’s prepare the fish now. We will cut the loin in stripes and slightly cook them for some minutes in a frying pan with two tablespoons olive oil and a clove of garlic. Nowputthem aside.

  • And now, we are going to prepare the stir-fry (sofrito) the base of every stew in Spain. In a frying pan with a couple of full spoons olive oil we are going to fry the onion cut into slices, then the minced garlic, and the green peppers cut into slices too. We cook it for approximately 10 minutes.

  • It is now the moment to peel the tomatoes, cut into small dices and add them to the stir fry. We keep on cooking for 15 more minutes

  • We add now the glass of Brandy and the dry Sherry wine and let’s cook for 10 minutes so that the alcohol evaporates.

  • Put the fish strips in the stir fryand cook it for a couple of minutes so that the flavors mix well. Our ingredients are ready now.

  • We are going to extend the dough on the oven tray and spread first the homemade tomato sauce on top.

  • Let’s add now the stir fry with the vegetables and the cooked fish stripes.

  • Then we will add a splash of olive oil, ground black pepper, some oregano and nutmeg.

  • Let’s put the pizza in the oven and cook it for 15 minutes at 180º Celsius (350º Fahrenheit).
