Fresh Salmon cooked in Saffron sauce with Mushrooms sauteed with Sherry Wine

This past week we have celebrated the European day of the wine tourism and the International Sherry Week and we want to contribute to this celebration cooking and sharing this super recipe "Salmon in Saffron sauce with Mushrooms sautéed with sherry wine. Ingredients

  • 4 pieces of fresh salmon
  • 400 grs. of mushrooms
  • 80 g of cured serrano ham.
  • 1 onion
  • 1 pomegranate
  • 1 glass of sherry wine
  • 1 glass of seafood broth
  • 1 branch of thyme to the stew and another to decorate
  • 2 cloves of garlic
  • Olive oil
  • Flour
  • Pepper
  • Saffron
  • Salt

Preparation


⦿ We season the salmon pieces and distribute them in a baking tray with some oil-impregnated. We bake them in the preheated oven to 160 ° for about 10 minutes.


⦿ For the sauce we will chop the onion finely and fry it. When it is tender we add a pinch of flour, the sherry wine, the ground saffron and the seafood broth.


⦿ We season it with salt and the branch of thyme and lets reduce it for 10 minutes to medium fire.


⦿ Once the sauce is ready we serve grains of the pomegranate over it.


⦿ We are going to sauté the mushrooms with the garlic, cut in fine slices, and the ham in small dices.


⦿ When they begin to brown we season and remove from the fire, avoiding dehydration.


⦿ We are going to present our recipe, we serve the salmon once it is baked, juicy and hot, add the saffron sauce and we are going to serve them with the sautéed mushrooms. We will decorate it with a sprig of thyme.
