Autumn is already here, October has just started and it also starts the season for mushrooms  Garlic Mushrooms is a Spanish traditional “tapa” you can find in every bar. It is very tasty and so easy to prepare. If you have family or friends coming home this is a great starter to offer them and we are sure they will love it. Ingredients

  • 1 lb of mushrooms
  • 4 garlic cloves, chopped
  • 1/3 cup flat-leaf parsley leaves, chopped
  • 3.5 oz Serrano ham in dices
  • 4 tablespoons olive oil
  • 1 1/2 tablespoons dry sherry
  • salt and pepper

Preparation


⦿ We remove the stems from the mushrooms, wash, drain, and cut them in quarters or in sheets not very fine


⦿ We peel 3 of the garlic cloves and cut them into slices, heat the oil in a clay pot and fry the chopped garlic.


⦿ When browned we add the mushrooms and let them cook with a strong fire.


⦿ When they are half done, add the wine and cook until both the wine and the juice from the mushrooms have evaporated


⦿ We add the chunks of ham and stir so that they are well mixed with the mushrooms.


⦿ We season them and chop the remaining garlic and the parsley and add them just before removing the pot from the fire.
