Tomato Soup with Prawns

This is a great soup to enjoy any time of the year :-). We love this soup as well as some other bread soups, garlic soup, mantis fish soup… !! We really hope you enjoy it as much as we do:


Ingredients

  • 1 kg (35 oz) red tomatoes
  • 1/4 kg (9 oz) prawns
  • 1/4 kg (9 oz) bread (pan de telera)
  • 2 green peppers
  • 1 onion
  • 2 cloves of garlic
  • 1 mint
  • salt
  • 1 litre water
  • ½ glass mild olive oil

Preparation


⦿ We peel the prawns and keep them aside for later.


⦿ Then we will fry the heads and skin of the prawns in a pan, add about a litre of water and put to boil for 15 minutes. Strain the broth and set aside.


⦿ We cut the bread into very fine slices and roast them in the oven for 10 minutes. We reserve.


⦿ We chop the garlic and peel the tomatoes, onion and peppers in dices.


⦿ In a good pan we will prepare the sauce by adding oil and sautéing first the onion, then the garlic cloves and then the pepper and the tomato. We will poach all for 15 minutes.


⦿ In a clay pot, we will place the slices of bread, pour the sauce and add the water from cooking the prawns


⦿ Put it to boil and let it cook for 10 minutes and then add the prawns and the mint.


And ready to serve at the table, preferably in small individual clay pots and enjoy it.
