Cod in green sauce with king prawns

This week we are going to cook one of our favourite ingredients, cod, and we do it in green sauce with prawns. The result is super, very rich and tasty. But before sharing our recipe, we want to share with you some nutritional details of this very rich fish that we really like. The cod has a high biological value proteins able to replace all the cellular structures damaged during the day. That is why it is recommended to athletes, children and adolescents, people in periods of convalescence of diseases, and especially to pregnant women or nursing mothers. The iodine present in all sea fish, and therefore also the cod, makes it an interesting food to regulate the metabolism of women after childbirth. This iodine will give energy to women and also strengthen you hair, skin and nails very damaged as a result of childbirth. Their phosphorus content helps to keep the bones of women in optimum conditions and increases your endurance in this phase of great wear for her. And we ready to share our recipe this week :-)


Ingredients

  • 500 g. (1 lb) fresh cod
  • 8 King prawns
  • 1/2 medium onion
  • 1 leek
  • 3 garlic cloves
  • 50 g. of peas
  • Salt
  • Prawn broth
  • Parsley
  • Sherry wine
  • Flour
  • Extra virgin olive oil

Preparation

HOW TO PREPARE:


⦿ To start with we are going to prepare the broth. We are going to peel half of the prawns and we are going to fry the heads and the skin in a pan with a tablespoon of olive oil. We set them aside and pour them in a pot with half a liter of water and cook for half an hour. In the last few minutes we will add the four whole prawns so that our broth gets more flavour. We set aside, strain, and we already have our pranws broth


⦿ In a pan with some oil we are going to fry the cloves of garlic, the leek and the onion cut into strips. When they are fried we are going to add the glass of dry Sherry Wine and continue cooking until the alcohol evaporates.


⦿ In a mortar, we are going to make a “majaito” with a sprig of parsley and add it to the broth.


⦿ And now let’s prepare the Cod. We will season it and dip in the flour slightly.


⦿ In the pan we used to poach the vegetables, with some olive oil, we're going to fry the cod filets and the broth and the peas.


⦿ Cook continuously moving the pan with lateral movement and in this way the cod will be releasing its jelly sauce. This way, our sauce will be thickening as if it were a pil pil sauce.


⦿ When we notice our cod is done we are going to add the peeled prawns, the ones with skin, chop the parsley and sprinkle it on top. Remove it from the fire.
