Meat and Artichokes Stew

This week we want to share with you a very yummy stew cooked with veal meat, potatoes and artichokes. You will see how easy to prepare and how tasty. We have used again sherry wine which gives a very special character and taste to all we cook with this unique wine in the world. We share now the recipe, with the wish that you enjoy it very much:


Ingredients

  • 1/2 kg. (1 lb) Veal meat
  • 1 kg. (2 lb 3 oz)potatoes
  • 1 onion
  • 1 green pepper
  • 1 tomato
  • 1 big carrot
  • 100 grs. (3.5 oz) green peas
  • 2 artichokes
  • 2 bay leaves
  • 125 ml. (4 oz) mild olive oil
  • 125 ml. (4 oz) dry Sherry wine
  • 1 tablespoon red paprika
  • 250 ml. (8.45 oz) mineral water
  • Salt
  • Ground Black pepper

Preparation


⦿ We peel the potatoes and cut them into quarters. Put them in a bowl with water and set them aside.


⦿ We cut the meat into pieces and season it. We will add some oil in the pot where we will prepare the stew and add the meat pieces. We will cook it for some minutes and take it out of the pot. We keep aside.


⦿ In the same pot, we are going to fry all vegetables (garlic, onion, tomatoes, green pepper, and carrot) cut into small cubes (brunoise) and artichokes peeled and cut into 4 pieces. Also add the bay leaf and the peas.


⦿ Once we cooked all vegetables, add the meat and stir everything, adding the paprika and then the wine. We cook for some minutes so that all ingredients mix and the alcohol from the wine evaporates.


⦿ We add the hot water. We cover the pot with the lid and cook for about 30 minutes, until the meat is tender.


⦿ We lift the lid up, add the potatoes into dices and stir so that everything  mixes well. Add enough water to cover the potatoes.


⦿ We continue to cook until the potatoes are ready approximately for 15 minutes and our stew will be ready.


We are ready to sit at the table and enjoy this dish so rich and so complete.
