Puchero Gaditano (Traditional Local Broth)

This is the most popular and traditional soup people in this area and we cook it very often, specially at this time of the year. It is a very rich soup, really easy to prepare and it can last for some days. Besides you can prepare another dish cooking the meat and the vegetables from this broth and we will share it with you in the next issue, called Ropa Vieja (old clothes). This is the recipe:


Ingredients

  • 1 chicken thigh and a chicken breast
  • ¼ kg. (1 cup) of Hock (jarrete)
  • A Salty bone
  • A Chest bone
  • A Bone marrow (tuétano)
  • A pieces of Bacon
  • 1 piece of salted rib
  • ¼ kg. (1 cup) soaked chickpeas
  • This soup to be enjoyed with thin noodles (fideos) or white round rice
  • The vegetables:
  • 1 potato
  • 2 carrots
  • 1 stick of celery
  • 1 leek
  • 1 turnip
  • 1 leave of mint

Preparation



  • We rinse the bones, meat and chicken with warm water.

  • We will fill a big pot with water and add the bones and meat (chicken and veal).

  • We boil everything for 30 minutes, and will remove the resulting foam

  • Wash, peel and chop all the vegetables and add them to the pot, as well as the chickpeas

  • After it starts boiling, we will keep on cooking for two hours over medium heat.

  • Once it is ready we will add the broth to a saucepan, and will prepare it either with thin noodles or rice, to your taste.

  • And ready to serve at the table, serving the broth with noodles or rice, the chick peas, the potatoes, and besides the meat and vegetables on a separate dish. You can add a few leaves of mint to the soup. Very tasty and delicious.
