Christmas Recipes

We are in December and we love preparing recipes for Christmas. This is certainly an ideal Christmas recipe and it is usually served as a starter of a great Christmas lunch or dinner. To cook this recipe, we have used king prawns from the local Fishermen Association. They are delicious and besides we consume local. This is a very simple recipe with a very good result at the table. The truth is that we love it and it is a very good start. Ingredients

  • 10 leaves of lettuce
  • 24 King Prawns
  • 1 avocado
  • salt
  • To prepare the Cocktail Sauce:
  • 1 egg
  • 200 ml. (7 oz) olive oil
  • Salt
  • The juice of half a lemon
  • 1 tablespoon mustard
  • 2 tablespoons orange juice
  • 2 tablespoons whisky
  • 1/2 teaspoon hot chili sauce
  • 1 teaspoon Worcestershire English sauce
  • 3 tablespoons ketchup sauce

Preparation


⦿ We start cooking the king prawns. Put water to heat and when it starts boiling we are going to season and add the king prawns. When the water begins to boil again, we remove them from the fire. Put them in a bowl with cold water and some ice. Drain them and then peel. Chop them into cubes and set aside two prawns per person to decorate.


⦿ We will make now our homemade mayonnaise. We put the egg in the blender glass, add some drops of lemon and season.


⦿ We are going to introduce the mixer arm down in the glass and let’s start adding the oil little by little. When it begins to emulsify we will move the arm up and down very gently until it is well mixed and consistent. We are going to keep the mayonnaise into a bowl.


⦿ We will boil the whiskey and add it to the mayonnaise. Then add the tomato “Ketchup type” sauce, the mustard, the spicy sauce, the English sauce and the Orange juice. Mix well and set aside our Cocktail sauce.


⦿ We will wash the lettuce leaves, dry them and cut them into thin strips. Then peel the avocado and cut it into thin slices.


⦿ Mix in a bowl the lettuce, the chopped prawns, the avocado and the sauce.


⦿ To serve, put the leaves of lettuce into the glasses, then fill them with our cocktail mix and decorate with several prawns that we have reserved.


⦿ We have served them into special Cocktail glasses, used to serve this type of recipe. These glasses have a small bowl on the top where we serve the cocktail and go inside a round glass full of chopped ice cubes. The truth is that when you serve it at the table, besides it is well presented, the cocktail keeps cool.
