Stuffed Avocados with Seafood Cocktail

This week we are very happy since a very good friend of us has given us some fresh avocados taken from her crop. It is a summer recipe but the avocados were so nice that we did not think twice and prepared them the nicest way we can  The result has been really good and with a lot of flavour. We share now our recipe hoping that you cook them and share the result with us:


Ingredients

  • 2 avocados
  • the juice of half a lemon
  • some lettuce leaves
  • ½ a cup / 100 grs. boiled and peeled king prawns (we keep 4 to decorate)
  • 6 imitation crab sticks
  • Pink sauce:
  • 3 tablespoons homemade mayonnaise
  • 1 tablespoon Ketchup tomato sauce
  • 1/2 tablespoon brandy

Preparation


⦿ We start our recipe, cutting our avocados lengthwise and removing the bone being very careful that we do not break them. Remove the pulp, put it in a bowl and add a few drops of lemon juice to both the pulp and the shells so that it doesn’t rust.


⦿ Then we are going to chop finely our ingredients. We start with the well washed lettuce and continue with the boiled and peeled shrimps and the imitation crab sticks. We add everything into the bowl with the avocado pulp and mix well.


⦿ We prepare our homemade mayonnaise and in a small bowl we add three tablespoons of mayonnaise, the ketchup tomato sauce and the brandy. Stir well and add to the mixture of the filling.


⦿ We will now fill our medium avocados with the resulting mixture and decorate with the shrimps we kept as we can see in the picture.
